Cheesecake Swirl Brownies

I took my favourite fudgy brownies that so many of you love and added cheesecake batter to them! Some of it gets swirled on top and some of it gets mixed right in as you do the swirling. The result is an intensely fudgy brownie, with a tang from the cream cheese and bits of cheesecake on the top. So good.

The cream cheese changes the texture of these brownies and the top doesn’t get the same flaky crust of a regular brownie but it’s delicious even without it! Gooey, super chocolatey and oh-so-moist.

The swirls of cheesecake batter give the top a marbled appearance that I love and though I didn’t try baking it as a layer on top of the brownie batter, I’m pretty sure it could be done. The only thing I’d keep in mind is that cheesecake batter tends to crack at a higher temperature which is needed for the brownies to bake through, so the top might not be super smooth.

Cheesecake Swirl Brownies

Ingredients
  

For the cheesecake batter

  • 150 gms cream cheese, at room temperature
  • 3 tbsps caster sugar
  • 1 egg, at room temperature
  • 1 tsp vanilla extract

For the brownie batter

  • 85 gms butter, at room temp (6 tbsps)
  • 170 gms dark chocolate (70% to 75%), finely chopped (use baking chocolate or a good quality plain bar of chocolate)
  • 1/4 cup cocoa powder (20 gms)
  • 3/4th cup caster sugar (140 gms)
  • 2 eggs, at room temperature (see notes)
  • 1/2 cup all-purpose flour (60 gms; see notes)
  • 1 and 1/2 tsps vanilla extract
  • 1/4 tsp baking powder
  • salt if using unsalted butter

Instructions

  • In a bowl, whisk the cream cheese and sugar together until smooth. A balloon whisk is great here or you can use a wooden spoon. Add the egg and vanilla and whisk again till the egg is incorporated. Place the bowl in the fridge while you make the brownie batter.
  • Now preheat the oven to 175 C. Line an 8" square pan non-stick baking paper, leaving a little overhang for easy removal.
  • In a bowl placed over a pot of simmering water, melt the butter, chocolate and cocoa until you have a smooth mixture. Let this cool while you get the rest of the batter ready.
  • Beat the eggs, sugar and vanilla in a large bowl till pale and thickened, about 3 to 4 minutes. An electric mixer on medium to high speed will get the best results.
  • Add the cooled chocolate mixture to the egg mixture and beat again on low speed till combined.
  • Sift in the flour, baking powder and salt, if using and fold to combine into a thick batter.
  • Spread the brownie batter into the prepared dish and then drop the cheesecake batter over it in spoonfuls. Use a toothpick or sharp knife to swirl it all around (see photo in the post above). Some of it will get mixed into the brownie batter, that's fine, it adds more flavour.
  • Bake for 25 to 30 minutes until a toothpick poked in the center comes out with moist crumbs and no wet batter.
  • Allow the brownies to cool completely at room temperature (ideally overnight, loosely covered) before slicing with a sharp knife into 16 squares. Best stored at room temperature in an airtight tin for 2 to 3 days in humid environments, after which they can be kept in the fridge for a week, or even frozen for a month. They are fudgiest on day one and will become slightly drier (not in a bad way) and more cakey as the days go by. Happy baking!

Notes

*Make sure you don't overheat the chocolate mixture. Once the chocolate is almost melted, take it off the heat and stir vigorously. It will melt completely in the heat of the bowl itself.
*If you only want the cheesecake as swirls and not mixed into the batter, make half the amount of cheesecake batter. I haven't tried baking the cheesecake batter as a single layer on the brownie batter, but it should work, keeping in mind that it might have some cracks on top (since the temperature is higher than cheesecakes should normally be baked in, but the brownies need that temperature to cook through.)
