Double Chocolate Pecan Granola Bars

Full of toasted pecans, these crunchy, super satisfying, chocolatey granola bars are a great wholesome snack, healthier dessert, quick breakfast. Basically, they can be whatever you want them to be. Cocoa and a thin layer of chocolate take them into the not-cardboard end of the granola spectrum and I seriously can’t stop eating these!

These bars were a way to finish off some nut butter and rolled oats I had, plus a good way to make sure there was some healthy snacking possibility through the week. They’re very similar to these granola clusters, but heavier on the nuts this time and have cashew butter for a more neutral flavour (although any nut butter will work). Baking them in a pan for a more portable bar-form works out super nicely, especially since once chilled, they hold their shape and are easy to slice too.

As soon as they’re out of the oven, finely chopped melted chocolate is scattered all over, given a few seconds to melt and then spread out evenly, before topping with more toasted pecans. It’s this layer that takes the granola bars to the next level, do not skip it! Use any chocolate you like, but a 75% chocolate has a mild sweetness that I really love here.

They’re super crunchy, slightly chewy in the center and absolutely packed with flavour from the buttery pecans and the chocolate. Walnuts will work too if that’s what you have on hand. They come together super fast and can be stored in the fridge for a couple of weeks so this is all kinds of winning. Chunky and fully addictive. I hope you make these today!

Double Chocolate Pecan Granola Bars

Ingredients
  

  • 1 cup pecans (100 gms; walnuts will work too)
  • 1 and 3/4th cup rolled oats (200 gms)
  • 1/3 cup shredded, unsweetened coconut (20 gms; see notes)
  • 3 tbsps cocoa powder
  • 1/3 cup creamy cashew butter (90 gms; or any nut butter you like)
  • 1/4 cup olive oil (60 ml)
  • 1/4 cup honey (85 gms)
  • 1/2 tsp vanilla extract
  • 80 gms dark chocolate (70% to 75%), finely chopped

Instructions

  • Preheat the oven to 175 C. Spread the pecans out on an ungreased baking tray. Bake for 5 to 7 minutes until they're fragrant and lightly toasted. Set aside to cool for 15 minutes, then use your fingers to break them into small pieces, or chop them up coarsely. Reserve 1/3 cup to sprinkle on top of the bars at the end.
  • Now in a mixing bowl, combine the oats, coconut and cocoa. Add the toasted pecan pieces (not the reserved 1/3 cup) and stir well to combine.
  • Add the nut butter (if it's very thick, or cold from the fridge, microwave it to melt it a little bit so you can mix it in easily) and stir it into the dry ingredients. Add the oil, honey and vanilla and stir the whole mixture together until it's all evenly coated. It will look quite wet (see photos below) but if it feels excessively wet, add a couple of tablespoons of oats. If it seems dry, add more honey or nut butter.
  • Tip the mixture into an 8-inch square baking pan, lined with non-stick baking paper with an overhang for easy removal. Press the mixture down firmly and evenly with your fingers or the base of a measuring cup. It's important to tightly pack it in so the bars hold together when you cut them.
  • Bake for 25 to 30 minutes until the edges are set and darkened. The center will still feel soft. Immediately scatter the finely chopped chocolate all over the top. Wait for a few seconds to let it melt, then use a spoon or blunt knife to spread it all over in an even layer. Scatter the remaining toasted pecans on top and press them in lightly to help them stick.
  • Allow the granola to cool at room temperature for 30 minutes, then refrigerate for 1 hour to let the chocolate set. Use the paper overhang to remove it from the pan, then slice into 12 equal bars using a very sharp knife. There might be some crumbly bits at the edge (honestly the best pieces if you ask me!) but the bars will hold together well.
  • Store in the fridge for about two weeks, and they can also be frozen for longer. Happy snacking!

Notes

*The coconut adds a little texture and moisture, but it's not prominent in flavour. If you don't have it, you could probably skip it and add a little more liquid or oats as needed if the mixture is feeling too dry or too wet.
*Instant or quick-cooking oats are not recommended here. They are more powdery and absorb much more liquid and the end result won't be as crunchy or chewy.
