These cupcakes were just an excuse to use these seriously fun cupcake liners. Also a birthday gift, and yes, also from the husband 😀
I was craving cake, I had cream cheese frosting leftover from these red velvet cupcakes, I had a killer lemon blondies recipe which I’d been waiting to bake in my muffin tray for agesssss. And of course, these liners.

I didn’t have an occasion to bake them for, so I halved the blondies recipe (which means effectively, I quartered the original one) and made just two. Two slightly large cupcakes, I admit, because it seemed pointless to make two medium and one reeeeely tiny one.
And then I tried out a new piping tip I got from Arife and look who managed to frost a cupcake 🙂 I actually had to hold it to the piping bottle with one hand because it was too small for the tip 😛
They took about 35 minutes to bake which is how long the entire tray of blondies took! I turned my back for a second and they were suddenly golden-brown. Tad crustier than I’d have liked but soft and lemony and spongy and moist on the inside.
I’m going to start quartering more recipes, such a nice way to satisfy a dessert craving but not be overcome with guilt or leftovers! It’s also great to not use a hand mixer sometimes. It was such a small amount of batter that I just mixed it with my hand and it was in the oven in less than 10 minutes.
I topped the cupcakes with some extra lemon rind. Such cuties 🙂
