Tonight was one of those nights when I HAD TO HAVE CAKE. But, after a long day, patience is the last thing I found in the kitchen. So, in my messy pink book of recipes, I came across a scribbled lifesaver. One that I’d tried before and it turned out to be the only microwave cake I’ve ever made or been pleased with! It takes less than 10 minutes to throw together and bake. And it’s got Nutella in it. What’s not to love?!
What you’ll need:
4 tbsp flour
3 tbsp sugar
3 tbsp cocoa
3 tbsp milk
3 tbsp vegetable oil
3 tbsp Nutella (or just a big scoop like I did!)
A few drops of vanilla essence
What to do:
1. Mix all the dry ingredients in a large microwavable mug (a wide, flat one works best), then add the wet ingredients including the egg. Mix again and add the vanilla essence. For this cake, just throwing all the ingredients in together like this works fine, even if you don’t follow the traditional steps of creaming the oil and sugar first.
2. Add the Nutella and microwave on high for about 4 minutes. The cake will rise like a crazy thing but won’t fall out of the mug and will sink back in almost instantly.
And that’s it! Seriously 🙂 Let it sit for a couple of minutes and then have it straight from the mug, makes it more fun 🙂

P.S. I’ve noticed that microwave mug cakes do tend to look a sci-fi-ish with craters and peculiar tops. I guess there’s got to be some price to pay for a shortcut 😀
